🥗 Mung Bean Sprout Salad with Lettuce & Capsicum
Ingredients (Serves 2):

1 cup mung bean sprouts (lightly steamed or raw)

1 cup shredded lettuce (any variety)

½ cup thinly sliced capsicum (bell pepper – red, yellow, or green)
Simple Lemon Dressing:

1 tablespoon fresh lemon juice

1 teaspoon olive oil (or any neutral oil)

Salt to taste

Freshly ground black pepper

Optional: a pinch of red chili flakes for mild heat
Instructions:

Prepare ingredients:

Rinse mung bean sprouts. Steam lightly if you prefer them softer; otherwise, keep raw.

Wash and shred lettuce.

Thinly slice capsicum into strips or julienne.

Make dressing:
In a small bowl, whisk together lemon juice, oil, salt, and pepper (and chili flakes, if using). -
Assemble the salad:
In a large bowl, combine mung bean sprouts, lettuce, and capsicum. Pour the dressing over and toss gently. -
Serve immediately for the freshest texture and flavor.
